Pat the chicken breasts dry and season both sides with salt and pepper. Let them sit at room temperature for 10 minutes while you prepare the vegetables.

Heat a grill pan or outdoor grill over medium-high heat and brush the grates with the 1 tbsp of olive oil.

Grill the chicken for 6 to 7 minutes per side, until a thermometer inserted in the thickest part reads 165°F (74°C).
